晩メシの支度を予定より早めて、定番のかぼちゃ入りのラタトゥイユを作り始める。

しっかりした野菜とハーブで作れる時は、ラタトゥイユレシピで標準的なオリーヴオイルもにんにくも鷹の爪も使わない。
塩だけ。

マリオが言っていた。

いいトマトがあれば、トマトソースはトマトだけでいいんだぜ。
にんにくもとんがらしもオイルも何にもいらないんだよ。

食べる時にちょっと寂しいな、と思ったらその時にオイルをたらせばいい。

Leaving a tusk, I started preparing dinner, my standard ratatouille with the pumpkin.

Mario says.

With good tomatoes, we don’t need anything. No garlic, no chili, no oil.

If it misses something when you eat, just one swirl of oil.

きれいなオレンジ色を見てるうち、「これならジャムも作っとこうか。」

皮をとって刻んで40%の花見糖と混ぜて放っておく。汗をかかせる。水分が出てから作る方がうまくできるからね。
裏ごししない、いつもの怠け方式
バターナッツかぼちゃは甘味もあるけど、酸味もある。だからレモンも入れないの。

仕事を片付け、泳いで来て、火をつけて…

ジャムは煮込まない。焦げない程度の弱めの中火、強めの弱火で、ワーッと煮あげるほうが香りが活きておいしい。イメージと違って、結構すぐにできるからいい。

The beautiful orange color lets me make jam.
Remove the skin with a peeler and the seeds with a spoon, just slice it, add 40% of Hanamito of the flesh weight and leave all in a thic pan to make it sweat. This is a better way to make yummy jam.
Butternut scquash is sweet and sour, so I don’t add lemon.

After finishing today’s work and swimming, turn on the gas, then the process is the same.

It was so difficult to find “normal” local cheese in Japan 20 – 30 years ago.
Naturally, the difficulty was normal because Japan had just a short tradition to live with milk.

Nowadays it’s still not like our life with tofu but getting much easier to get fresh natural cheese made in Japan.

This is a happy dinner after a stroll of Ginza just adding ratatouille with fresh local veggies.

Nearby ingredients play dance with ideas from far away.

“ふつうの”日本製のナチュラルチーズを見つけるのは、ホント、大変だった20〜30年前の東京。
牛乳とともに生活する習慣はまだまだ短かったんだから、まぁ、当然と言えば当然。

この頃は、豆腐と同じとまでは行かないけど、以前とは比べられないほど手に入れやすくなった。

銀座をちょっと歩いたら見つかったから、この日は夏野菜をワッとサッと煮たラタトゥイユと一緒に、簡単+ハッピーディナー。

近くの野菜が遠くのアイデアで踊るダンス。

のらから届いた丸ごとのかぼちゃ。
丸く愛らしい姿が言ってるような気がする。

何かいつもと違うもの作ってよ。

I received a whole pumpkin from Nora, it was not cut.
The round warm shape leads me to make something different from ordinary soup-boiled style.

素朴なテクスチャーが好きだし、面倒だし、かぼちゃを蒸してから裏ごしするのは省く。皮と種を取ってスライスしたままで、正味量の40%の花見糖と合わせて煮始める。
いろいろ心配しないで、でも、わりと頻繁にかき混ぜる。焦がさないようにね。
大丈夫そうと感じた時が危ない。放っておくとあっという間に飴状に進んでしまうから、そばで見ているのが大事。

あんこに例えれば、つぶあんっぽいかぼちゃジャムのできあがり。

I prefer rough texture. Omitting steaming and straining the pumpkin, I remove the skin with a peeler and the seeds with a spoon, just slice it, add 40% of Hanamito of the flesh weight and cook in a thic pan.
Without hesitation I often mix all not to stuck them to the bottom of the pan and to crush the sliced flesh.
Don’t leave the pan alone to turn the gas off at the best point.
